On a hot, sultry summer night, a cup of cold gazpacho can really hit the spot. This particular variation of the Andalusian potage is made with pureed tomatoes, beets, oranges, apples, onion and garlic — among other things — and garnished with fresh mint, apple and cucumber slices.
