The Good You food truck is back in business

Yesterday marked the official return of the Good You food truck to Kansas City’s mobile-dining community. As Fat City reported last month, owner Kelli Daniels was sidelined when her burger-and-sandwich truck was vandalized while parked in a downtown lot. While her insurance company was deciding whether to pay her claim, she held a benefit on October 16 to raise repair funds.

“With the insurance money I did get and the funds raised at the benefit,” Daniels says, “I was able to pay for all the repairs. I was so moved by all of the friends and customers who turned out for the benefit. People came who couldn’t afford to make a donation, brought brownies or something to share at the event.”

Today, Daniels drives her kitchen to a parking lot in the vicinity of the University of Kansas Medical Center during the lunch hours. You can find the truck at 18th Street and Locust later in the evening, selling to tonight’s First Friday crowds.
