Small is big again at Sweet Tomatoes and elsewhere

Two decades ago, the restaurant trade magazine Nation’s Restaurant News announced that the big trend for the ’90s would be smaller restaurants. Back in 1991, NRN writer Carolyn Walkup reported that restaurant entrepreneurs would “operate smaller and more closely controlled companies than in the past.”

I’m not sure whether that “trend” really took hold in the 1990s, when the economy was much more robust than it is now. But in this decade, the concept of “smaller, more closely controlled companies” seems to be having a revival.
