Should grilled-cheese sandwiches remain pure?

These days, it seems like grilled-cheese sandwiches are about everything but the cheese. The bread is artisan, and meat is as likely to be the focus as the cheese. 

Back in my day, I remember when butter in the pan for browning the bread seemed like a fancy option. Is this the moment that we take back grilled-cheese sandwiches and say it’s American or cheddar or bust? Or are we now adults and capable of enjoying sophisticated versions of our childhood favorites?
