Salty Iguana’s Tacos Azul show that blue corn should be on more menus around town

I didn’t grow up going to the Salty Iguana (8228 Mission) in Prairie Village, but once I had a kid, it was only a matter of time before I ate there. It’s the Fritz’s Railroad of Mexican restaurants.  

Because I’m coming to the Salty Iguana later in life, I’m likely discovering what many of you already know. Iguana murals are creepy at first, and then oddly charming by the end of the evening. And the restaurant’s signature Tacos Azul are a blue-corn revelation.
