Opening Soon: The Mixx in the P&L District

Jo Marie Scaglia, owner of The Mixx — the four-year-old fast-casual salad-pasta-sandwich concept near the Country Club Plaza — is almost ready to open her second location in the Power & Light District. The new venue, in the central courtyard across from Rob Dalzell’s Chefburger (and the recently shuttered Yummo frozen yogurt), was scheduled to open next week, but a few unexpected mechanical obstacles have set back the date. “We’re now looking at the first week in October,” says Scaglia, walking through the nearly completed space.

The interior of this second Mixx location was designed by Kansas City’s Clockwork Architecture + Design, with lots of environmentally friendly green materials — and an emphasis on not looking like a duplicate of the Plaza space. There’s no orange in this color scheme, which focuses on soft, earth-toned colors (primarily pea-soup green). The new Mixx won’t be considerably larger than its sister location, but the operating hours might be: Scaglia is considering breakfast on weekday mornings (breakfast sandwiches, frittatas, fresh fruit) to encourage corporate breakfast-meeting business.

Both Mixx locations will see an expanded menu when the P&L location opens. Scaglia plans to keep most of her signature items, drop a couple of slow sellers, add a few more salads and wraps and increase the number of daily pasta offerings to five. What she isn’t doing is raising prices: “Our prices have only gone up 50 cents over the last four years,” she said. “We have a reputation for serving healthy, tasty food with value. In this economy, that means a lot to our loyal customers.”

Scaglia is counting on the loyalty of her clientele to support her expansion and the new competition facing both of her locations. Ingredient, the similar fast-casual concept that started in Lawrence a few years ago and already has one local restaurant in Leawood, is preparing to open new Plaza and downtown venues this year.
