Michael Foust, Part 3: The importance of beer pairings

Chef Michael Foust sits at the large wooden table at the front of his restaurant. He leans back, the logo on his shirt for New Belgium’s Ranger India Pale Ale clearly visible, and he prepares to get down to the business of beer pairing. The Farmhouse is one of the few joints in town that has a companion suds for every dish on its menu.

“This is just stuff that we love to eat and drink. It’s that simple,” Foust says. And with that, he’s ready to talk about the key to matching beer with what’s coming out of his kitchen. On Wednesday, he explained his take on Midwest comfort food, and yesterday we learned that broccoli is his nemesis.
