- Liberty has joined the food-truck movement.
People of Liberty, the food trucks are coming. The Liberty City Council approved a two-year mobile-vending pilot program earlier this month that allows for vehicles and trailers to set up in a designated area or private parking lots downtown.
Food trucks will need to apply for a two-year license, which costs $50, and have the proper insurance and health permits. They had previously been prohibited from operating in the city. 3 Girls Cupcakes owner Simonie Wilson, who worked with the city to create the program, has been selling her cupcake creations in Liberty this month.
