Jax Fish House will open in new Polsinelli building on the Plaza

The Boulder, Colorado-based Big Red F Restaurant Group is planning to open a Jax Fish House, one of the company’s seven culinary concepts, in one of the two restaurant spaces in the Polsinelli building at 900 West 48th Place. There are already four Jax Fish Houses in the Denver metro; the founder of the company, chef Dave Query, told The Denver Post last summer that he had been scouting a Kansas City location. Query opened his first Jax Fish House in Boulder 20 years ago.
Most of the Jax restaurants in Colorado are dinner-only venues. The menu is comparable to Kansas City-based Bristol Seafood Grill, which was the premier seafood restaurant on the Country Club Plaza from 1980 to 1995, with a variety of fresh fish dishes, oysters, gumbo, clam chowder. Jax Fish House restaurants also offer a selection of caviar.
