I’ll have the Kung Pao quesadilla….

I’m always thrilled to celebrate culinary ingenuity, which is why I couldn’t be more impressed by the concept of the Jasmin Restaurant in beautiful downtown Eudora, Kansas — a city named after the first baby born in this quaint hamlet in the 1850s.

I was only passing through Eudora when I stumbled on this little treasure, so I haven’t actually eaten in Jasmin yet, but I can hardly wait to go back. The restaurant doesn’t mingle the two culinary styles, but the menu has an extensive array of Chinese fare on one side and a more modest selection of Mexican dishes on the other. The dessert choices are more universal: fortune cookies and fried ice cream.
