Eggs…everywhere

A perfectly cooked egg is a sign of a great chef. Don’t believe the hype? Why else do you think the chef’s egg trick is so popular at Benihana? (For pure procrastination, watch this video of a Benihana chef’s tricks set to a techno-based remix of “Gangsta’s Paradise” — it is beyond compare).
Most of us don’t make perfect eggs, but all of us can make eggs. As such, it’s always nice to have a few additional egg-related tricks up the sleeves of your chef whites or yolk-stained T-shirts.
In addition to providing some basic tips on egg size and type, The Chicago Tribune has a sweet guide to cracking eggs with one hand. The four-step photo series looks like a tutorial for how to throw a curveball, but the steps actually work. The first time it feels counter-intuitive, but the motions are easy enough to learn that you can get it right by the time you’re done making a recipe that calls for a few eggs.
