​Summer’s a great time for cold soups like gazpacho or a fruity chilled-melon concoction. This potato-and-leek potage is traditionally served in all seasons, but it’s particularly popular during the sultry summer months. The French vichyssoise — correctly pronounced, according to the Food Lover’s Companion, as vishsh-ee-Swahz and not vinsch-ee-Swah — served at this popular bistro is decadently rich — almost too rich to eat more than a few bites. The consistency is close to melted frozen custard, and the fat content may be nearly that high.
