We received an e-mail here in Fat City last week from former Kansas City chef Tim Doolittle — his local resume included stints at City Tavern, EBT and the Stolen Grill — who now works for celebrity chef Wolfgang Puck in Las Vegas. Doolittle had read our conversation with young Jason Wiggins, the newest executive chef at Chaz on the Plaza, the restaurant in the Raphael Hotel. Doolittle wrote: “What happened to Peter Hahn?”
