Chef Matt Chatfield, Part Two: No wimpy bacon and spiced strawberry jam

Executive Chef Matt Chatfield has a small office amid the dry-goods storage at the Culinary Center of Kansas City. He points to the pictures over his computer. Next to photos of his wife and daughters is a posed picture, not unlike a class photo, taken at a Shotokan Karate Club retreat. Chatfield is among those gathered in white uniforms, his place earned as a practicing black belt.
“Excellence comes from doing something every day,” Chatfield says.
