Chef Carter Holton, Part Three: The perfect dessert, Baba Au Rhum (Rum Baba)

Carter Holton is a pastry chef in search of perfection, whether it’s in perfecting a recipe or plating a new dessert. So Fat City decided to make it difficult for him by asking him to describe the perfect dessert. His description of a rum baba (after the jump) sounds fairly close to that ideal.  

On Thursday, Holton explained how he got his start at Le Fou Frog and in the classroom, and on Friday, he confessed his love for Missouri persimmons.
