Restaurants come with cachet — it’s why so many of us have restaurant ideas squirreled away like unpublished screenplays in drawers. But even if you can’t secure a small business loan, you still can be the first in the door when the next great restaurant opens.

Eaters come with all manners of budgets and priorities. Some want to support local new ventures and are eager to discover if a new spot will be part of their regular rotation. Others have tight dining budgets or like to let a place iron out the kinks.
