A friend of mine told me he got some very good head at Gavino’s Mexican Restaurant — located in the storefront space previously occupied by Tienda Casa Paloma space at 8220 Metcalf in Overland Park. I did a double-take. Good what?
“Cabeza,” he explained. “The head of a roasted cow. It’s a little fatty but loaded with flavor. It’s tender, crunchy — it makes one of the best tacos ever.”
