To whet your appetite for The Pitch’s annual Best of Kansas City issue, we’re counting down our favorite Top 50 dishes each weekday until October 7.
There are many variations of the classic Waldorf salad, but chef-owner Cari Jo Cavalcante of the Bloomsbury Bistro — the luncheonette inside the Mission Road Antique Mall in Prairie Village — hews closely to the original: the one reportedly created in the late 19th century by the legendary Oscar Tschirky, the maitre’ d of the original Waldorf-Astoria Hotel in New York City.
Any salad can call itself a “Waldorf” salad, but there are certain ingredients required to make it authentic.
