Chef Dan Swinney, Part Three: No music in the kitchen, unless it’s his kitchen

Chef Dan Swinney remembers being in kitchens where the music changed from station to station, boom boxes blaring out a cacophony of rap, heavy metal and Portuguese folk music.
“It’s funny. I spent a lot of time in the music business, but I don’t actually allow music in the kitchen,” Swinney says.
The executive chef at Lidia’s Kansas City wants to make sure that his staff is focused and thinking about only one thing — the next few hours of service. On Wednesday, Swinney explained what compelled him to leave the music business for the restaurant world, while on Thursday he shared his love for Thai food.
