Chef Nate Feldmiller, Part Two: The wonder of chives and Supertramp

  • Nate Feldmiller is the executive chef at Cafe Europa.

At a corner table in Cafe Europa that has likely seen as many women in hats as the Kentucky Derby, executive chef Nate Feldmiller is starting to get animated. He has just confessed to recently purchasing Big Trouble in Little China on Blu-ray, the latest addition to a collection of movies that is decidely dude-a-rific.

“I love watching bad movies. I really like the old ’80s terrorist thrillers. I can’t help it,” Feldmiller says.

Yesterday, Feldmiller talked about eating and cooking in New York City. Tomorrow he shares his vision for the perfect sandwich. Today, he talks up an under-appreciated vegetable: cabbage.
