The word seva is from the Sanskrit root sev: “to serve, to wait upon, honor or worship.” If you can transpose that into remarkably attentive service in an Indian restaurant, you have restaurateur Gurdev Singh’s shiny new Seva Cuisine of India, a two-month-old venue tucked into a strip shopping center at 8674 N.E. Flintlock Road in Liberty.

The restaurant offers a fine array of vegetarian dishes – vegetable korma, paneer masala, gobi Manchurian, lentil dal – as well as the traditional curries, tandoor oven-roasted meats, freshly baked breads and biryani rice dishes that have become so popular over the last two decades. Indian cuisine is a solid component of American restaurant culture.
