715’s Michael Beard butchers a 250-pound hog (video)

Michael Beard, the chef at 715 in Lawrence, gives Fat City readers a taste of what it’s like to butcher a 250-pound pig, in the video above shot by Allie Mason. The pig is from Norton Farm in North Kansas City. The restaurant also gets its pigs from Good Family Farm in Olsburg, Kansas.
