Last October, Chris and Mistie Roberts spent their 12th wedding anniversary brewing beer in the garage of their Olathe home. This year, they’ll open the doors to the newest brewery in the metro area: Red Crow Brewing Co. (207th Street and U.S. Highway 169, Spring Hill).

Earlier this month, Red Crow announced on Facebook that the brewery and taproom will open Saturday, October 17. The doors open at 1 p.m.

Over the weekend, Red Crow provided an update.

“6 MORE DAYS until Saturday, October 17th!! Our opening day!! Our doors will open at 1:00pm. We will have beer and games, indoors and out. Beauty of the Bistro will have food available starting at 6:00pm and the Lauren Anderson concert starts at 7:00pm. We are so excited to finally share our beer with everyone. Can’t wait to see you all!!”

When Red Crow goes live, Red Crow will offer five core beers — each named for influential women in the Roberts’ lives. Among them: Isabelle (Belgian blonde), Frances (pale ale), Donna (American wheat), Elaine (rye porter) and Louise (IPA). Frances, Elaine and Donna will be available in smaller quantities because “we only had so much time to brew,” Mistie Roberts tells The Pitch

Red Crow is brewing on a a seven-barrel system. Last year, Chris Roberts told me that Red Crow’s initial production run would be “modest,” despite the ability to pump out 400 barrels a year for in-house sales (topping out at 1,750 total barrels).

Red Crow will be open 4:30-10 p.m. Thursday-Friday, noon-10 p.m. Saturday and noon-5 p.m. Sunday. A rotating cast of food trucks will set up outside the brewery on Fridays and Saturdays (they’ll also test out Thursdays and Sundays). So far, here’s the schedule:

Saturday, October 17, Beauty of the Bistro, 6-9 p.m.
Sunday, October 18, Prairie Fire Oven, noon-4 p.m.
Thursday, October 22, Twisted Asian, 5-9 pm.
Friday, October 23, El Tenedor, 5-8 p.m.
Saturday, October 24, Twisted Asian, 12:30-4:30 p.m.
Friday, October 30, Cheeesy Pops Pizza, 4:30-8:30 p.m.
Saturday, October 31, Twisted Asian, 12:30-4:30 p.m.
