KC Sipps: New bourbon in Waldo, a full day Chingu pop-up, and dining for good

Something New
News Bites: Happy first anniversary to The Patio! The Patio is a Black-owned soul food restaurant and bar, with an R&B and patio-inspired theme in Independence. Specials like $5 lambchops on Thursdays and a DJ’d brunch on Sundays entice new customers, but the party-like vibes keep guests coming back.
Kon Tiki, the Crossroads tiki bar connected to the brilliant blue Conchita Tacos, has a completely new food menu. Conchita Tacos currently has a “temporarily closed” note on its Google listing, and the website now redirects to Kon Tiki. At the cocktail bar, the new food menu promises stylish Polynesian fare, featuring a $29 Ohana Platter with samplings of five shareables like egg rolls, huli huli wings, and more.
Many local establishments are keeping up their activism for our immigrant neighbors beyond last week’s strike and fundraisers. Places like: The Westside Local, who are selling cookies and donating 100% to Advocates for Immigrant Rights and Reconciliation (AIRR), and Cafe Corazón, which donates a portion of Corazón de AIRR Latte proceeds throughout February. Former Pitch writer Tyler Shane has created a list of specific food items across the metro that support AIRR. After all, we can’t fight fascism (or anything) on an empty stomach.
Opening
Brown Suga: From pop-ups to one brick and mortar in Olathe, and now a second location in Leawood, Brown Suga is rising as a cookie star in KC. The new store is in Park Place, specifically the former Cupcake A La Mode spot. It opens February 7, and plans to hold hours of 10 a.m. – 8 p.m., Mondays through Saturdays.
Audrey’s Wine + Bourbon: Audrey’s is Waldo’s newest spot to drink and try something new. With a flagship offering of a bourbon tasting flight plus a glass of wine, the staff is ready to help you open your mind to unique pairings. It is now open Wednesdays through Saturdays, starting at 4 p.m.
February 6
Jim’s Alley Bar: Jim’s isn’t a sports bar. But it’s not not a sports bar. The small Crossroads bar has sneaky-good food, and is celebrating the kickoff of the Winter Olympics this weekend with a special menu. Get in the spirit with Italian-inspired specials like $4 limoncello or Peroni, $10 antipasti plates, and $13 Italian sliders.
February 7
Pinches Tacos: Pinches in Westport is kicking off the Valentine’s holiday early with two events. First, Cupid’s King drag brunch kicks off at 11:30 a.m., followed by the Love Potion drag show at 9 p.m. Reservations or tickets are not required.
Garden House Cafe: One of my favorite spots in Rosedale, Garden House, has invited Chingu in for a special one-day-only food menu. From 8:30 a.m. – 2 p.m. (or sell-out), Chingu will have a menu of Korean sausage burritos, avocado toast with a jammy egg, and more to accompany Garden House’s coffee drinks. Then, starting at 4 p.m., Chingu will set up next door at Sagebrush for a dinner pop-up. That menu includes kimchi fried rice, bossam, sliders, and more. Take Alex’s word for it and pair it with the namesake sagebrush cocktail.
