Eat This Now: Birria tacos from Street Tacos
Street Tacos in Olathe has redefined the birria taco game by proving that size might actually matter. Located at the heart of Olathe, Street Tacos can be found inside KC Pan Factory. They’re two different entities in one: an authentic Mexican taco shop and a bakery.
The birria tacos are stewed beef tacos served with consommé for dipping, lime wedges, salsa roja, and salsa verde.
Opening up the styrofoam to-go box, I expected to find a typical serving of two to three tacos, only to wonder what I’d done to receive such great karma. I’d been gifted four! And I’m not talking skinny, mini street tacos. I’m talking about a tortilla stuffed with two inches of meat and cheese. Though lifting each taco is a feat of strength, my tastebuds encourage me to persevere.
It’s time to dip and dish. At first bite, primary tasting notes come from the beef fat that melts on the tongue and the warmth of crisp, toasted cheese that has been embedded into the sides of the tortilla. It’s a matrimony between grilled cheese and all the traditional south-of-the-border flavors. I’m hit next with the smoothness of the consommé, which is mild and has hints of chile, cilantro, and white onion. There is very little trace of salt, meaning it’s not overpowering the flavors in the actual taco. Bites are protein-heavy, making them right at home in the Kansas City metro, and they are packed with enough cheese to make the state of Wisconsin jealous. Sound the alarm bells if you are lactose intolerant!
The tortillas hold together despite the excessive juices from the stewed meat, which I can’t help but rejoice over because nothing is more tragic than a broken taco shell. Tacos are meant to be eaten with our hands; it’s the very principle of finger food. We must get the chance to abandon all utensils like cavemen. However, if manners mean that much to you, consider having a moist towelette nearby, and don’t make the mistake of wearing a white shirt.
If opting for one of the salsas, the salsa roja has the most kick, so don’t get overzealous if sensitive to spice. For additional flavor and less spice, the salsa verde has an essence of lime and cilantro perfect for those wanting to lighten up the palate to contrast the richness of the beef and cheese. Depending on the salsa you choose, these birria tacos are perfect for those who can’t handle the heat, and also for those who want to cremate their mouths with capsaicin.
