Eat This Now: Asada fries at Papis Tacos

Since opening last May, Papis Tacos food truck has been serving authentic Mexican staples like tortas, tacos, aguas frescas, and eloté.

While I’m usually one to go for tacos, I couldn’t help but turn my attention to the asada fries on the snack menu. If there’s one thing I love more than tacos, it’s loaded fries.

The asada fries at Papis Tacos start with a base of well-seasoned, straight-cut French fries. They are then topped with bite-sized pieces of grilled steak, melted Chihuahua cheese, shredded lettuce, pico de gallo, guacamole, nacho cheese, and sour cream. They also come with your choice of mild or hot salsa. 

The fries are crispy on the outside and soft on the inside—as fries should be. The asada is juicy and tender with a slightly smoky flavor. Initially, I thought the combination of Chihuahua and nacho cheese would overpower the fries, but, instead, they brought a nice balance–ensuring cheesy goodness in every bite. 

I opted for the mild salsa verde. If you prefer an extra kick, try the habanero salsa. The salsa’s consistency is smooth and thin. 

While the asada fries may be on the snack menu, for $15, they are definitely a meal all by themselves. Whether you finish them in one sitting or save enough to satisfy your late-night cravings is entirely up to you.
