Are you surprised that Kansas City is vegetarian-friendly?

Kansas City earned the moniker of cowtown honestly by ensuring that plenty of cattle came in whole, but most left in pieces. And quite of few of those pieces ended up in Kansas Citians. That said, I was surprised to see that VegNews had named Kansas City as one of its “five surprisingly veg-friendly cities in the United States” (perhaps my homerism is finally starting to show), joining Cincinnati, Anchorage, Detroit and Pittsburgh.
I remember the days when a vegetarian in my party could look forward to the dreaded vegetarian plate of steamed vegetables and limp pasta. And I know we have meat sanctuaries where the closest you’ll get to a vegetable is potatoes cooked in beef tallow. But I thought we’d moved on from the idea that only meat eaters can be happy in this burg. Are you (still) surprised that Kansas City is vegetarian-friendly?
