Our sneak peek of the upcoming Mahomes/Kelce KC steakhouse ‘1587 Prime’
A new steakhouse is set to open later this summer, and there are two big reasons why the city is already abuzz about it. Patrick Mahomes and Travis Kelce are linked–from the restaurant name, to design choices, and more–to 1587 Prime, an upcoming restaurant from Noble 33. The international restaurant group’s newest spot is still in the construction phase, but The Pitch had the opportunity to don a hard hat and tour the site to chat with executives about what KC can expect.
I’ll take you on a descriptive journey as if you’re walking through the front doors for the first time. Think of it as an imagination exercise as you look at the raw, construction-site photos.
As of now, the entrance at Baltimore Ave and Truman Road downtown is covered with an unassuming, temporary beige door. Inside the doors is a tunnel leading to the host stand and meat display, which will emulate a stadium tunnel experience. Cheesy or classy? To be determined.
As a host or maître d’ escorts you to a table or booth, your eyes may dance around to take in the marble and metal details. To the right, under the staircase, 1587 Prime promises live music nightly on a small stage. To the left is a large wine display. Noble 33 representatives noted that all of their U.S. restaurants earned Wine Spectator’s 2025 Best of Award of Excellence.
Just past the wine display is the large wrap-around bar, where bar seating will be available. Those seats will have some of the best views of the TV display, which will show Chiefs games throughout the season, but remain hidden most of the time. If you were expecting a sports bar, you’re in the wrong spot.
Unless you’re seated downstairs on this journey, it’s time to venture up the wide staircase.
The second level features an open kitchen, table and booth seating, a dining area overlooking the highway (or future park) that can be closed off for a 40-person private dining space, and an uber-private dining room for around 20 diners. That private dining room was designed with VIPs in mind, complete with a private entry from the hotel, a large two-way mirror, and custom woven leather wall art. The two-way mirror was put in place, according to Director of Hospitality for Noble 33, Sacha Tanha, so that privacy-seeking guests can still feel a sense of the energy and crowd at the restaurant.
This left me feeling conflicted–respecting the desire for privacy and safety, yet unable to shake the sense of the Capitol peering upon District 10. This is likely a common feature in the group’s Vegas, NYC, London, etc. locations, but we’re still getting used to the celebrity attention in KC. And to our credit, we have a reputation for playing it fairly cool (in their presence, at least) when celebs like Taylor Swift have been rumored to dine at local favorites like Rye or Noka.
For most of us who won’t be seated in the swanky private rooms, that may mean you get a great view of the kitchen. The open kitchen concept is meant to show off the authenticity of the food while adding to the lively energy of the atmosphere.
Matt Smith, Chief Marketing Officer for Noble 33, says that they’re deep into the interview process for the executive chef, and they are getting someone local to Kansas City. 1587 Prime is still hiring, with 14 positions currently available.
The menu at 1587 Prime will offer American Steakhouse classics, like a variety of top-tier local meats, A5 Japanese Wagyu, seafood and raw selections, family-style à la carte side dishes, cocktails and mocktails, a wine list aiming for another Award of Excellence, and desserts, plus a few unique surprises.
There will be some “culinary nods to Patrick and Travis, and some things they like and are known for,” says Smith. Naturally, that led me to ask if this is going to be the one place where eating a steak with ketchup will be accepted, to which Smith laughed and said I may have figured out one of the surprises.
In this writer’s opinion, a steakhouse in a nice hotel was a smart move, as compared to trying to infiltrate our barbecue or taco scene. Smith says, “Kansas City is an incredibly proud community that does its barbecue extremely well. We’re not going to come in here and try to show experts how to do barbecue, so we do steak very, very well.”
Smith says that Noble 33 leans on its steakhouse experience, but is excited to not be confined to a secondary theme. “It’s really our first American concept. We have a Mexican steakhouse concept, an Italian steakhouse concept. So we have carved out a niche in terms of creating these more interesting takes on steakhouse menus, as opposed to your sleepy, traditional wooden steakhouses that just have the cuts with butters and a couple sauces. We tend to chef them up a bit more.”
Time will tell if 1587 Prime at Loews Hotel will rely on being a tourist favorite for the countless conferences and tournaments held downtown at any given time, or if the locals will embrace it the same way we’ve embraced the two namesakes. The Chiefs connection, the meaty yet elegant marble surfaces, the upscale references to football, and the possibility of getting a peek at a Kelce brother are alluring, at first, but the food and service will have to prove themselves against established favorites to convert locals into regulars.
